Saigon Cinnamon is the strongest cinnamon available. It is sweeter and spicier than regular cinnamon and is quite common in Vietnamese dishes. It possesses a strong, rich flavor that works well in many types of food.
Use in Vietnamese pho and curries, or in baked goods, such as cinnamon rolls. When using as a replacement for regular cinnamon, use less to compensate for the strength.
