Annatto is a slightly peppery, sweet spice that holds a hint of nutmeg. Its yellow to orange hue is often used to add color to otherwise bland looking foods. You will find annatto most often used in Latin and Caribbean cuisines. It is also sometimes used for its medicinal value.
Use on pork, chicken, tamales or anything that needs a little brightening. Heat the seeds in oil to produce a bright yellow color. For color purposes, annatto can be used as a substitute for saffron, although it does not taste similar.
