Amchur comes from dried mangoes and has a slightly fibrous texture. It is most often used in Indian cuisine and adds a tart, slightly sour citrus flavor to foods.
Use in Indian curries, chutneys, marinades or soups. Amchur also works well on the grill with chicken or fish. Can be used as a substitute for lime or lemon juice or for tamarind, particularly when you don't want the dark color of tamarind.
