Asafoetida is a strong seasoning used in Southern Indian cuisine. Raw, it has a rather pungent, acrid smell and taste, but when cooked it adds a smooth and lightly sweet flavor, reminiscent of leeks or shallots.  It is known to have some medicinal qualities as well.


Use in curries, pickles, vegetables, potatoes and Indian sauces.
