Rosemary is a pungent and piney herb, typically associated with Italian cooking. It is a versatile herb though and dried rosemary can be used in place of fresh. Remember to chop finely, as rosemary can be difficult to chew.
Use in sauces, olive oils, vegetables, jellies and blends. Or rub on chicken, lamb or veal.
