Lemon Grass has a light lemon flavor that is essential to many Asian dishes. Dried lemon grass has a much longer shelf life than its fresh counterpart, making it a better option in many cases.
Use in Thai soups, curries and peanut sauces. Or rub on fish or pork. When substituting for fresh lemon grass, use only half the amount specified.
